Corn and Black Bean Salsa

Ingredients

    1 can black beans, drained and rinsed in cold water
    1 can sweet corn, drained and rinsed in cold water
    1 cup kamut, soaked overnight then cooked
    6 tomatoes, roughly chopped
    1 cup onions, finely chopped
    1-2 serrano peppers, finely chopped
    1-2 jalapeno peppers, finely chopped
    1-2 red chili peppers, finely chopped
    1-2 garlic cloves, finely chopped
    1 small bunch cilantro, finely shredded
    Juice of 1 lime

Directions

1. Drain and thoroughly rinse corn and black beans. Put in large mixing bowl.

2. Add cooked kamut and toss until mixed. Squeeze lime juice over beans and corn.

3. Finely chop other ingredients (leaving tomatoes a little chunkier) and stir well. For best results, let sit overnight in refrigerator before consuming.
