Chicken Thighs in White Wine

Introduction

I get this started and then while it is slowly cooking I enjoy sitting on the lanai! It smells so good when you walk into the kitchen.Prep time may vary - how fast do YOU work?? I get this started and then while it is slowly cooking I enjoy sitting on the lanai! It smells so good when you walk into the kitchen.Prep time may vary - how fast do YOU work??
Number of Servings: 4

Ingredients

    4 chicken thighs, skinned
    3 tbsp olive oil
    1/2 cup sliced onion
    1/2 cup sliced sweet red pepper
    6 med sized mushrooms, sliced (your choice of type)
    1/4 cup sundried tomatoes
    3 fresh basil leaves
    1 tbsp oregano
    1 tsp fresh thyme
    3 oz white wine...or more if desired
    dash salt & black pepper

Directions

Saute the onions, garlic and red peppers in the oilve oil on medium heat in large skillet or pan.
Add thighs, brown on each side.
Add mushrooms, sundried tomatoes and herbs.
Cover with white wine, adding additinal if needed or desired.
Cook on low heat approximately 30 minutes til thighs are tender and done.
Makes 4 servings

  • Just smelling it cook was enough to make my mouth drool. I didn't have the red pepper by itself, but I did have a Summer Vegetable combo in the freezer that had it, so I used the whole bag. I'm glad I did. - 12/15/07
