Enchilladas

Submitted by: EDNAJMARTIN

Introduction

This dish is traditionally made with chicken, however my husband and I love to use it with pork as well. I slow baked the pork cuts in olive oil as you do carnitas and then I used it shredded the next day. Directions

This recipe can feed 12 people. I think it depends on who is on a diet and who isn't. I happen to be the only one. :) Well, this recipe is not low cal unless you only eat a little, and make a few modifications. I love to eat real food and then burn it off with exercise later, so this food is really good! chop up all the ingredients and mix them together to cook. Cook on stove until warm. Then put them into the tortillas and put the cheese on top and bake until bubbly. Then when done, Enjoy!!! Then work off those calories the best you can.
