Introduction

This recipe is a work in progress -- I am trying to emulate Chicken tortilla soup, but without meat and made from scratch. Keep an eye on this recipe, I plan to tweak it as I make it! Ingredients

    1 can black beans, drained and rinsed under cold water
    1 can corn, drained and rinsed under cold water
    1 cup kamut
    6 cups water
    1 small white onion, chopped
    1 green pepper, chopped
    1 red pepper, chopped
    5-6 tomatoes, chopped
    1 jalapeno pepper, finely chopped
    1 serrano pepper, finely chopped
    1 red chili pepper, finely chopped
    1 clove garlic, finely chopped
    1 T chili powder
    1 T cayenne pepper

Directions

1. Soak kamut overnight.

2. Add black beans and corn. Bring to a boil. Boil 5-7 minutes, reduce heat and simmer.

3. Add onions and garlic. Simmer another 10 minutes.

4. Add tomatoes and peppers. Simmer 20-25 minutes.

5. Add seasoning. Simmer another 10-15 minutes, until ingredients are tender and spices are well-mixed.
