Throw Together Lentil Stew

Introduction

Vegetable filled lentil stew made with things sitting around my kitchen at the moment. Vegetable filled lentil stew made with things sitting around my kitchen at the moment.
Number of Servings: 4

Ingredients

    1 Tbs Extra virgin olive oil
    half an onion
    a couple of small yellow potatoes
    a few baby carrots
    half a medium sized zucchini
    1/4 cup chopped tomato
    3/4 cup dry lentils
    2 can veggie broth
    a dash of oregano
    one bay leaf

Directions

chop everything up
heat pan with 1tbs olive oil
add onions to soften
add all other veggies but potatoes and tomato

pour in veggie broth, lentils, potatoes, oregano, and bay leaf and bring to a boil

lower to a simmer and cover - let cook until everything is tender

can easily be made lower sodium by cutting broth with water or using a low sodium broth. Could always be made more into a soup by adding more liquids.
