Number of Servings: 18

Ingredients

    1 box red velvet cake mix
    2 large eggs
    1/3 cup oil
    1 can cream cheese frosting (or homemade if you're so inclined)

Directions

Mix cake mix, eggs and oil together. Measure 1 level tablespoon and roll into a ball. Place balls 3" apart on a lightly greased cookie sheet and gently flatten with glass.

Bake at 375 degrees for 8-10 minutes. Cookies will crackle. Cook and sandwich with cream cheese frosting.

Makes about 1 1/2 dozen.
