Turkey & bean tex-mex salad

Ingredients

    1/4 lb 93% lean ground turkey
    1/2 medium onion chopped into long slivers
    1 cup frozen corn kernels
    1 can black beans, drained and rinsed WELL
    4 tsp old el paso low sodium taco seasoning mix
    1/2 tsp ceyenne powder
    1 tsp garlic powder
    1 tsp canola oil
    8 tbsp old el paso medium taco sauce
    1/2 cup reduced fat mexican cheese blend shredded
    8 cups romaine lettuce, chopped
    1 3/8 oz bag baked Doritos (your choice of flavor)

Directions

Brown ground turkey in a pan with taco seasoning, garlic powder, and ceyenne pepper. When done, add rinsed & drained black beans to meat. Mix very well, and let sit. In a microwave safe bowl, separate onion pieces, and toss well with canola oil. Pour frozen corn kernels on top of onions. Microwave for about 4 1/2 minutes on regular power. When finished, mix corn and onions with meat and beans mixture. Serve 1/4 of the meat and bean mixture on top of 2 cups of romaine lettuce for each serving. Top each salad with 2 tbsp shredded cheese, & 2 tbsp taco sauce. Crunch up bag of baked doritos, and put 1/4 of the bag on each salad. ENJOY!
