Broiled Portabella Mushrooms

Ingredients

4 Portabella Mushroom Caps
1.5 Tbsp Olive Oil
3 Garlic Cloves, minced or chopped
4 cups Spinach, fresh
1/2 cup Mozzarella Cheese (shredded)
Directions
1. Wash & de-stem mushrooms caps. Lay them on a cookie sheet and drizzle with 1 Tbsp of Olive Oil. Place them in the oven on a hi broil for about 10 minutes.
2. Meanwhile, heat the remaining 1/2 Tbsp of Olive Oil in a sautee pan. Toss in the garlic & spinach and sautee until spinach is completely wilted and a deep green.
3. Pull out the mushroom caps and evenly divide the spinach to top each one.
4. Top each with a bit of the mozzarella cheese (goat cheese is also good!) and place back in the oven to broil 5 more minutes until cheese is melted and slightly browned.
Serves 4, one mushroom each.
