This is the ultimate healthy, comfort food dinner for those cold rainy nights when you dont know what to cook or just want to get rid of some left over chicken.

*Substitute chicken breast pieces with whole rotisserie chicken (skin and fat removed)
This is the ultimate healthy, comfort food dinner for those cold rainy nights when you dont know what to cook or just want to get rid of some left over chicken.

Ingredients

    2 Cups Brown Basmati Rice
    2 Cups Niko Calrose Rice
    2 Cups Low-Sodium/Fat Free Chicken Broth
    2 Cups Water
    2 cans Cream of Mushroom Soup (98% fat-free)
    1 whole rotisserie chicken (fat, skin and bone removed)
    1 pkg Knorr Vegatable Soup Mix

Directions

Place all liquids and soups together and whisk until blended. Add rice and chicken, cover in a 5 qt baking dish at 350 degrees for 90 minutes. Uncover at 75 minutes and turn oven up to 357 if you like it a little crunchy on top!
