Celery Yogurt Soup

Introduction

I had a bunch of celery that I wanted to use up so I went online and combined a couple of different yogurt soup recipes. I served it cold so it was almost like tzatski but without the cucumber. I had a bunch of celery that I wanted to use up so I went online and combined a couple of different yogurt soup recipes. I served it cold so it was almost like tzatski but without the cucumber.
Number of Servings: 3

Ingredients

    5 or 6 stalks of celery (this recipe isn't really exact)
    1 tblsp of earth balance or olive oil
    2 or 3 scallions or onions
    2 cups veg broth
    3 cups soy yogurt
    dill to taste

Directions

Saute the celery and scallions in the 1 tablespoon margarine, oil or soften in broth (the nutritional info includes Earth Balance)
Add one cup broth and cook for 5-10 minutes.
Transfer to a blender and puree.
Return to pan on stove and add one more cup of broth and stir for another 5-10 minutes. Season with salt and pepper and then place in fridge to cool for at least an hour (I left mine overnight).
Once cool, mix in the yogurt and dill and re-season if needed.
Serve chilled.
