Ingredients

    Lentils, 2 cup
    Water 7 cup
    Butternut Squash, 1 cup, cubes
    Carrots 1 cup, chopped
    Celery 1 cup, diced
    Cilantro, fresh, 3 tbsp
    Onions, raw, .5 cup, chopped
    Green Beans (snap), 1 cup
    Coconut Milk, .3 cup
    Garam Masala, 4 tsp
    Cloves, crushed, 2-4 cloves
    Coriander, ground, 2 tbsp
    Cumin, ground, 1 tbsp
    Garlic, 1/4 cup, copped
    Salt, 2 tsp/to taste
    Tomatoes, fresh, 1.5 cup, diced
    Lemon zest, 1 pinch
    Red potato, 2 small, cubed, 1/2 inch
    Cayenne pepper, 1/2 tsp
    Green Chilis, 3 fresh or 1 small can, diced

    plain or greek yogurt
    fresh cilantro

Directions

cook lentils in water until soft

add the rest of the ingredients and additional water if needed. simmer until thickened and vegetables are soft, approximately 1 hour.


add the plain or greek yogurt about 1 tablespoon and some
fresh cilantro for garnish.
