Mom's Healthy Pancakes

Introduction

using oats, blueberries & cottage cheese w/ flax seeds & almond meal using oats, blueberries & cottage cheese w/ flax seeds & almond meal
Number of Servings: 6

Ingredients

    1 cup whole oats
    1/2 cup cottage cheese
    1 cup blueberries
    1/2 cup apple juice
    2/3 cup soy milk
    2 cups whole wheat pancake mix
    1/2 cup almond meal
    2 Tblspns ground flax seeds

Directions

Serving size is 3, 4-in pancakes.

Using a blender, combine first 5 ingredients until smooth.
In bowl, add pancake mix, almond meal, and ground flax seeds.
Pour in blender ingredients.
Add water and apple juice in sufficient amounts for desired thickness of pancakes.
Cook in hot skillet.
Serve with your choice of toppings. Recommend a fruit and yogurt topping.

(I ate mine plain. - Makes ahead to grab & go in AM.)
