Barley, pearled, cooked, 2 cup (remove)
Water, tap, 12 cup (8 fl oz) (remove)
Onions, raw, 2 small (remove)
Red Ripe Tomatoes, 4 medium whole (2-3/5" dia) (remove)
Cucumber (peeled), 2 cup, pared, chopped (remove)
Arugula, 1 cup (remove)
Pepper, black, 1 dash (remove)
Basil, 5 tbsp (remove)
*Extra Virgin Olive Oil, 2 tbsp (remove)
*Balsamic Vinegar, 2 tbsp (remove)
2.) Drain wheat berry and rinse with cold water. Chill for 30 minutes or until cold.
3.) While wheat berry is cooking and chilling, in a bowl, combine onion and vinegar and let stand at room temperature.
4.) Add chilled wheat berry and remaining ingredients and toss salad to combine well.
