Introduction

Number of Servings: 12

Ingredients

    9oz plain flour
    1tsp baking powder
    1tsp bicarbonate of soda
    1tsp cinnamon
    1/2 tsp ginger
    1/2 tsp nutmeg
    4-6oz caster sugar
    1 egg
    3 fl oz milk
    3 tbsp honey
    1/2 425g tin pumpkin (approx 7fl oz)
    3fl oz vegetable oil
    2-3 oz raisins

Directions

1. Prepare muffin tins and preheat oven to 375-400F, 190-200C or Gas Mark 5-6

2. Sift together the flour, baking powder, bicarbonate of soda, spices and sugar

3. In a separate bowl (I usually use a large measuring jug) beat egg with a fork and add milk, honey, pumpkin and oil

4. Pour liquid into dry ingredients and stir until combined. Add raisins

5. Put mixture in tin and bake for 20-25 min.
