CREAM OF POTATO SOUP

Introduction

Number of Servings: 6

Ingredients

    4 potatoes, peeled & diced
    1 small onion, chopped fine
    1 can nonfat evaporated milk
    1 cup 1% milk
    1/2 cup flour

Directions

Peel & dice 4 med. potatoes. Add potatoes & onion to water & cook. When potatoes are done, add evaporated milk & return to a low boil. (DO NOT DRAIN THE WATER, ADD EVAPORATED MILK TO THE WATER POTATOES WERE COOKED IN.) Make a rue of the milk & flour & add to the soup to thicken it. Don't use too much, just thicken it enough to be creamy.
