4 English Muffins, cut in half, toasted
2 Tbsp plain yogurt (fat free preferably, but regular was used for the nutritional info because it's all I could find)
1 Tbsp Stone Ground Mustard (spicy or dijon will work, too)
1/2 tsp basil or tarragon
12 peices Turkey bacon, cooked
1 Medium tomato, cut into 8 slices
8 slices swiss cheese (to cut 50 calories per serving , you can use 1/2 a slice per sandwich instead)
8 poached eggs seasoned with Salt, Pepper and Paprika to taste (you can cut 20 more calories per seriving if you use egg beaters instead)
2. Place muffin halves on baking sheet.
3. Combine yogurt, mustard and basil in small bowl and stir to combine.
4. Spread yogurt mixture on each muffin half.
5. Stack bacon, tomato, egg and cheese on muffin.
6. Place under broiler until cheese melts.
