Jade's Best Ever Pumpkin Muffins

Introduction

Number of Servings: 12

Ingredients

    1.75 cups all purpose flour
    3/4 cup brown sugar
    1 tbsp baking powder
    1/4 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp ginger
    1/4 tsp allspice
    1/8 tsp cloves
    1 cup canned or pureed fresh pumpkin
    1/2 cup coconut or soy milk (I use coconut)
    1/2 cup vegetable oil (canola)
    2 tbsp molasses
    2 tbsp maple syrup
    1/2 cup fresh or frozen cranberries, chopped (optional)

Directions

Heat oven to 400. Spray muffin tin (12 cup) with cooking spray.
Sift together dry ingredients.
In a separate bowl whisk pumpkin, milk, oil, molasses and maple syrup until well combined.
Pour into dry ingredients and stir until combined.
Fold in chopped cranberries (walnuts are also good).
Fill muffin cups and bake 18-20 minutes, or until toothpick inserted in center comes out clean.
12 servings.
