Somewhat like a Spanakopita, but without the tang of feta. This is one of my daughter's favorite dishes, a special occasion sort of thing because it is a tad high fat!Somewhat like a Spanakopita, but without the tang of feta. This is one of my daughter's favorite dishes, a special occasion sort of thing because it is a tad high fat!

Ingredients

2 sheets Pepperidge Farm Puff Pastry
1 lb ground lamb
3 cloves garlic
2 cups baby spinach
egg
Cabot cheddar cheese
salt
pepper
rosemary
Directions
Thaw puff pastry a bit, until able to be rolled.
Brown ground lamb with garlic, steam baby spinach & squeeze out liquid,
add to lamb mixture.
Add salt, pepper, rosemary & one egg.
Mix together, and top on puff pastry sheet.
Grate a bit of cheddar over the top.
Cover with the remaining puff pastry sheet, seal the edges with a fork, & draw a design on top with a sharp knife, so the steam can escape.
Bake on a parchment paper lined cookie sheet,
at 400 degrees for 20-25 minutes
Cut into rectangles & enjoy!
