Ingredients

1/2 cup Quinoa (dry)
2 cups fresh or frozen spinach, chopped
1/4 cup sundried tomatoes (not oil packed)
1 tbsp olive oil
3-4 cloves garlic, minced
red pepper flakes, to taste
salt & pepper, to taste
Directions
Cook quinoa according to package (boil 1 C water, add 1/2 C quinoa and bring back to boil, the cover on medium low until water is absorbed, approx. 15 mins).
Meanwhile, heat oil in pan over medium heat and add minced garlic. Let it cook for a minute or two until garlic is sizzling, then add spinach. While spinach is cooking (shrinks down quite a bit), add sundried tomatoes and the pepper flakes and salt and pepper to taste.
When quinoa is finished, add to pan and mix together. Saute for a couple minutes, and you're done!
