Pork Chop and Potato Soup-Slow Cooker

Number of Servings: 8

Ingredients

    1 qt Pacific Organic Creamy Butternut Squash Soup
    3/4 cup Honey Mustard Dressing (Optional)
    2 Golden Potatoes
    2 Red Potatoes
    2 Sweet Potatoes
    3 Center cut pork chops, boneless
    1/2 tsp Cumin
    1/2 tsp Nutmeg
    1/4 tsp Ginger
    1 tsp Rosemary
    1 tsp Ground Black Pepper

Directions

Night before - 20 min prep -
Cube the potatoes and place in slow cooker - alternating types.
Cut 1/4 wedge of yellow and 1/4 wedge of purple onion - peel layers apart and place wedge pieces on top of potatoes.
(Could add some carrots and / or celery)
Pour the soup over the veggies.
Cube the Pork chops and place in slow cooker on top of the onions.
Pour Honey Mustard Dressing over the top of meat.
Add the seasonings.
Place the crock pot in the refridgerator until morning.
In the morning start the cooker when you leave for work (on low) and when you come home it will be ready to go.

Cook 7-9 hours on low or 3.5 to 4.5 on high.
Best if stirred about half way through. I started it at 6:30am and we ate about 5:00pm, so mine cooked almost 12 hours on low. Everything was still very tasty.
