Berry Bran Muffins

Introduction

Very yummy muffins, as is, they are low calorie, but if you used skim milk and some apple sauce it would make it even better. I used blackberries, but just about any type of berry will do, or raisins. Number of Servings: 16

Ingredients

    1 1/2 cup Wheat Bran
    1 cup Flour
    1 teas baking soda
    1 teas baking powder
    1 egg
    1 cup butter milk
    1/2 cup honey
    1/4 cup oil
    1 teas vanilla extract
    1 cup berries

Directions

Preheat oven to 375 degrees

Mix buttermilk and wheat bran in bowl and let sit for 10 minutes. (Note: If you do not have buttermilk, take regular milk and add some lemon juice. Let it sit for 5 minutes to form the butter milk, then mix into bran.)

Mix egg, honey, oil, and vanilla well in a bowl,
Add bran mixture and mix well
Add flour, baking powder and baking soda, mix well
Stir in berries.

Either use paper cups or grease a 12 cup pan. Should make 16 modest muffins, filled 3/4 of the way.
Bake for ~16 minutes (I use a toaster oven as much as I can so a normal oven may need a few extra minutes).
