Carrot Cookies

Introduction

An easy snack everyone can enjoy! An easy snack everyone can enjoy!
Number of Servings: 24

Ingredients

    3/4 cup margarine
    1/2 cup honey
    2 egg whites
    1 tsp vanilla extract
    2 cups all-purpose flour
    2 tsp baking powder
    1/2 tsp salt
    1-1/4 cups grated carrots

Directions

Mix the butter and honey.
Add eggs, and beat well.
Blend in vanilla.
In a separate bowl, sift together the flour, baking powder and salt.
Add the wet ingredients and mix well.
Stir in carrots.
Drop the mixture, by teaspoon, on greased baking sheets. Bake at 375 degrees F (190 degrees C) for 15 minutes and cool on racks.
ENJOY!

    So, I am seeing add raisins, cinnamon and nuts. Switch out regular flour for whole wheat flour. Switch out margarine for applesauce. And lower the oven temp. Okay...got it! - 5/4/09

    I like the idea but wouldn't use the margerine, substitute some of the white flour with wheat and add cinnamon, ground flax seed and walnuts to make it more flavorful and extra healthy - 7/28/08

    These were good! I used half white and half wheat flour and added some cinnamon and ground ginger. I also dropped the baking temp to 350. They are light and moist and really good! - 5/6/09

    to make it healthier, use applesauce as a substitute for marg. Add cinnamon and nuts too. Make a light glaze of powdered sugar and very little water to add a tad of sweetness. - 4/2/08

    I would never use margarine. (I'm surprised at Spark!)
    I'd change it to 1/2 c. olive oil. And what's wrong with whole eggs? Still believe that cholesterol hype? - 4/2/08

    I just got these out of the oven and ate my first one - they are very good in texture, I did have to lower the stove temp because I overbrowned my first batch too. I like the lack of sweetness! It lets the carrots kind of shine. - 4/2/08

    Swap out the margarine with applesauce, swap white flour with whole wheat flour, add cinnamon and nutmeg, add a handful of raisins and maybe agave nectar instead of sugar (directions say if the recipe calls for 1 c sugar, use 3/4 c of the agave nectar as it is a bit sweeter than sugar). Good recipe - 12/30/10

    Sounded good but when I figured up each cookie is 3 WW points, I decided against making these! Most regular cookies are only 2 pts. but I suppose by using applesauce, part Splenda, whole wheat flour, etc. it could bring these down to 2 WW pts. - 5/12/09

    I would make this without the margarine (I NEVER use margarine), adding spices, raisins and walnuts. Calorie rating would then be higher, of course. Only 1 cookie a day - freeze the rest.

    Bland. Make sure the carrots aresweetest available. Add cinnamon to sweeten. I will try usingcanola oil instead of the margarine. This is a good base recipe but needs more flavor. Butter buds may add flavor if using canola oil. - 7/22/08

  • I also think canned pumpkin is a good sub with some applesauce to add moisture and minus the margarine. A dash of sesame oil was good for me (I love sesame ginger carrots so it changed the flavor a lot but I thought it was a nice twist.) - 1/5/12
