Red Lentil Soup

Introduction

A simple & delicious soup that's low in calories but high in flavor. It can be prepared using vegetable, beef or chicken boullion - or for a milder flavor, none at all. A great source of protein + its vegan friendly too. A simple & delicious soup that's low in calories but high in flavor. Ingredients

    1 c. red lentils
    1 plum tomato, chopped
    1 medium carrot, peeled & diced
    1 medium onion, peeled & chopped
    1 t olive oil
    1 t garlic powder
    3/4 t salt
    1/2 t cumin
    1/4 t black pepper (or cayenne if you like more kick)
    2-3 t Better than Boullion Soup base (beef, veg or chicken - optional), start w/2 & adjust to taste
    4 cups water or stock (if using stock, omit boullion)

Directions

Heat a 4 quart soup pot. Add olive oil & swirl around in the pot to coat. Add ALL of the remaining ingredients & stir. Bring the soup to a boil. Once boiling, reduce heat to med-low, stir & put a lid on it. Allow it to simmer for 20-25 minutes.

For a creamier consistency, ladle some of this soup into a food processor or blender to puree. Enjoy!
