Number of Servings: 8

Ingredients

    6 large eggs
    1 cup 1% low fat, small curd cottage cheese
    2 cups shredded, reduced fat mild cheddar cheese
    1 box (10 oz.) frozen broccoli --thawed day before
    1 box (10 oz.) spinach --thawed day before
    1 small onion, diced

Directions

Day before making, thaw the box of broccoli +box of spinach and drain well. Keep refrigerated for the recipe, next day.

Mix and beat 6 large eggs with 1 cup of lowfat cottage cheese.
Add 2 cups reduced fat, shredded cheddar cheese and chopped onion to bowl.
Add thawed and drained-- broccoli and spinach. Mix well.
Spray 9x13 baking pan with cooking spray.
Pour all ingredients into dish and and level out evenly.
Bake at 375 degrees for 45 minutes
Serves: 8 people
