Sauteed Chicken Thighs with Spinach

Introduction

This is an adaptation of a Martha Stewart recipe. It's delicious, healthy, calls for ingredients I always have around and takes a half hour at most to make. Number of Servings: 4

Ingredients

    1 lb boneless, skinless chicken thighs, trimmed of fat
    2 t oil (I use EVOO)
    1/4 c. minced shallot
    1/4 dijon mustard
    1 T. vinegar (balsamic & white wine work well)
    1 pat butter (about 2 tsp)
    10 oz bag fresh spinach
    salt and pepper

Directions

Trim all fat off chicken, salt and pepper both sides. Heat 2 tsp oil in skillet. Saute thighs til golden (around 4 min per side). Remove and set on plate. Add shallots to pan, cook til soft (~ 3 min), be sure to incorporate the brown bits of chicken left in the pan. Stir in mustard and vinegar, cook 1 min. Remove from heat and add butter, stir. Add juice from the plate where the chicken have been resting.

Spoon half the mustard sauce over the chicken. With the other half, you can either add it to the spinach in a bowl to make a salad, or you can add the spinach to the skillet and wilt it a little (I prefer the latter). Salt and pepper to taste.

Makes 4 3-oz servings.
