Emeril's Stir Fry Chicken

Took this from Emeril and made it "our own" Took this from Emeril and made it "our own"

Ingredients

    4 - 6oz chicken breasts sliced thin
    2 Bags Bird's Eye Frozen Stir Fry Vegetables
    2 Tbsp Cornstarch
    5 Tbsp Low Sodium Soy Sauce
    2 Tbsp Hoisin Sauce
    4 Cloves of Garlic minced
    1 Tbsp Gingerroot
    1/2 Tsp Red Pepper Flakes
    1 oz dry sherry


Directions

Sauce: cornstarch, broth, hoisin, and sherry - wisk together and set aside.

put small bit of oil in wok, heat to high, but not smoking, scramble eggs, cook and remove.

put rest of oil in wok, heat to high, add in garlic and ginger - heat for a moment then add chicken - stir fry chicken until no longer pink. Add in vegetables, cook until veggies are warmed thru (about 3 minutes). Add in eggs. Then add in sauce, toss to coat chicken and veggies well. let cook for sauce to thicken and warm. Serve with brown rice (not in calorie total).

This made 10 large portions.
