Pepperidge Farm Chesapeake Cookies

Number of Servings: 48


    1 cup Benecol
    1 egg
    1 teaspoon vanilla extract
    1-1/2 cups demarara sugar
    1/2 teaspoon baking powder
    3/4 teaspoons baking soda
    2-1/2 cups all-purpose flour
    9 ounces of semisweet chocolate chips
    1-1/2 cups of chopped pecans


Makes 4 dozen

1. Preheat the oven to 375 degrees.
2. Cream the butter, eggs, and vanilla in a small bowl.
3. In a large bowl, sift together the sugar, baking powder, baking soda, and flour.
4. Combine the moist mixture with the dry mixture. Add the chocolate chips and pecans.
5. Shape the dough into 1-inch balls, and place them 1 inch apart on an ungreased cookie sheet.
6. Bake for 10 to 11 minutes, or until light brown around edges. (Note, 22-minute cooking time given at top assumes baking 2 cookie sheets full at a time, in 2 batches.)
