World's Best (and easiest) Chicken

Submitted by: TAUMEKA

Introduction

I pretty much just copied SparkPeople user VRAKLIS's recipe for salmon, and substituted chicken legs in place of the fish. I'm sure healthier substitutions could be made. I just used what I had on hand at the time. I also cooked mine on the grill instead. Ingredients

    1/4 cup organic wildflower honey
    1/4 cup kikkoman soy sauce
    3 tsp dried minced garlic
    2 tsp crushed red pepper
12 chicken legs - skin removed

Directions

Add the 3 tsp dried minced garlic to 1/8 cup hot water and let it sit for a few min to rehydrate. (Use that time to remove the skin from the chicken legs). Add honey, soy sauce, and crushed red pepper to the garlic in water and stir until combined evenly. Put the chicken legs and mixture into a gallon size ziploc bag. Marinate for an hour. (Use that time to fire up the grill and prepare side dishes). Once the grill is hot, put the chicken on. You can brush on more of the marinade during cooking. Grill until done.

I served mine with broccoli and couscous. It was great! hope you guys enjoy it as much as we did!
