Amazingly Good Carrot Cake

Introduction

Number of Servings: 20

Ingredients

    2 Cups whole wheat flour (I use white whole wheat, King Arthur)
    1 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp allspice
    2/3 Cup reduced fat sour cream
    1 egg
    1/2 cup palm sugar
    1/4 cup frozen apple juice concentrate
    1 tsp vanilla
    2.5 cups grated carrot
    1/2 cup chopped walnuts
    1/2 cup raisins
    4 oz (half package) neufchatel cheese
    3 tbs agave syrup

Directions

Mix flour, salt, baking soda, cinnamon and all spice in large mixing bowl.
Combine egg, sour cream, apple juice concentrate, vanilla and sugar. Beat.

Add wet and dry ingredients and mix. Mix in carrots, raisins and walnuts.

Pour batter (it will be thick) in a greased 8X11 pan. Bake at 350 for 35 minutes.

While cake is baking, mix neufchatel and agave in a blender. Spread sweetened cream cheese in thin layer on top of warm cake.
