IntroductionAn easy Vegan stir-fry that even my meat eaters will eat for dinner. An easy Vegan stir-fry that even my meat eaters will eat for dinner.
1 Tbs. olive oil
1 medium onion coursely chopped (2/3 cup)
2 cloves garlic, crushed or finely minced
2 medium zucchini (about 1 lb. coursely chopped)
1 14 ounce can diced tomatoes, with juice
1/2 tsp. oregano
1 15.5 oz. can beans (kidney, pink, black or garbanzo), rinsed and drained
salt & pepper to taste if desired
Add the tomatoes, zucchini and oregano. Cover the skillet and simmer for about 5 minutes or until the vegetables are tender-crisp.
Add the beans, and simmer the mixture stirring occasionally, until it is heated through. Season with salt & pepper if desired.
Serve over brown rice.
Makes about 6 cups.
