Betsy's Lentil Stew

Ingredients

    1 c. lentils
    4 c. vegetable broth
    1-1.5 t. basil
    1 t. black pepper
    1/2 medium onion, chopped
    4 medium carrots, chopped
    1/2 c. celery root, chopped
    1 T. parsley
    3 large tomatoes, chopped

Directions

4 servings.

Put lentils, onions, carrots, celery root, basil, and pepper into vegetable broth and bring to a boil, reduce heat to simmer. Simmer 30 minutes.

Add chopped tomatoes. Simmer 15 minutes.

Add parsley and serve.
