Quick veggie bean soup

Introduction

I adopted from a minestrone soup recipe and it's sooo tasty! I use not only kale, but a blend of greens (mustard, chard, spinach and kale) from a bagged Trader Joe's mix. I adopted from a minestrone soup recipe and it's sooo tasty! I use not only kale, but a blend of greens (mustard, chard, spinach and kale) from a bagged Trader Joe's mix.
Number of Servings: 6

Ingredients

    * Olive Oil, 1 tbsp
    * Onions, raw, 1 cup, chopped
    * Garlic, 4 cloves
    * *Turkey Broth, 4 cup
    * Vegetable Broth, 2 cup
    * Sweet potato, 2.5 cup, cubes
    * Green Beans (cut), 2 cup
    * Kale, 4 cup, chopped
    * Carrots, raw, .5 cup, chopped
    * Oregano, ground, 1 tsp
    * Salt, 1 tsp (or to taste)
    * Pepper, black, 1 tsp (or to taste)
    * Beans, pinto, 1.5 cup (1 can, drained)

Directions

In a soup pot or Dutch oven, heat olive oil. Saute chopped onion and garlic until transparent. Add broth, sweet potato, carrots, green beans, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer for 3 min. Add kale and can of beans. Simmer until veggies are tender.
