Pie Crust

Number of Servings: 8

Ingredients

    1-1/4 c unbleached flour
    6 T butter, salted, divided
    8 tsp ice water

Directions

Combine flour and 4 T of butter in a food processor. Pulse until it resembles coarse cornmeal. Add the last 2 T of butter and pulse until the size of peas. Add water 2 to 3 tsp at a time and pulse between each until dough forms.

Handling as little as possible, form dough into a ball and wrap in plastic wrap. Flatten into a disk. Don't worry if it doesn't hold together very well at this point. Put it in the fridge for 30 minutes.

Remove from fridge and roll out to fit a pie pan. Bake pie as normal.

Makes one 8" to 9" pie crust including deep dish.
