1-1/4 c unbleached flour
6 T butter, salted, divided
8 tsp ice water
Handling as little as possible, form dough into a ball and wrap in plastic wrap. Flatten into a disk. Don't worry if it doesn't hold together very well at this point. Put it in the fridge for 30 minutes.
Remove from fridge and roll out to fit a pie pan. Bake pie as normal.
Makes one 8" to 9" pie crust including deep dish.
