Italian-style Garbanzo beans with Kamut

Introduction

This is my first time trying this recipe. I will probably tweak it the next time, but the first attempt was actually pretty good! Makes a great side dish or light entree. Number of Servings: 4

Ingredients

    1 can garbanzo beans, drained and rinsed with cold water
    1 cup dry kamut, soaked overnight in cold water
    1/2 jar tomato sauce or pasta sauce
    1 clove garlic
    1 T olive oil
    1 T fresh chopped rosemary
    1-2 t fresh chopped basil

Directions

1. Soak kamut overnight in cold water.
2. Bring to a boil. Boil about 5 minutes, add garbanzo beans and reduce to a simmer. Simmer about 20 minutes.
3. Heat olive oil in a deep skillet. Add finely chopped garlic and saute until golden.
4. Add 1/2 jar (about 1 cup) tomato or pasta sauce to garlic. Stir well and heat until bubbling.
5. Add garbanzo beans and kamut to sauce, stir until well mixed. Add rosemary and basil, simmer until bubbling again.
