Introduction

Number of Servings: 6

Ingredients

    - 1 tbsp Olive Oil
    - 3/4 c. Lite Coconut Milk
    - 6 c. low sodium chicken broth
    - 1 pkg. Reduced Fat Firm Tofu, cubed
    - 2 tsp. turmeric
    - 1/4 tsp. cayenne pepper
    - 3 tbsp. peanut butter
    - juice from 1 lime
    - 2 c. thin egg noodles
    - 2 tsp. minced garlic

Directions

Add olive oil and garlic to stock pot, cook over medium heat for one minute. Add tofu, turmeric, and cayenne. Stir until spices are evenly dispersed. Cook over medium heat for 5 minutes. Add coconut milk, broth, peanut butter, lime juice and noodles. Bring to a boil, then simmer for 15 minutes. EnjoY!
Serves 6.
