Calabacitas Soup

Introduction

For this recipe, I use two leftover servings of my recipe for Green Chile Chicken. For this recipe, I use two leftover servings of my recipe for Green Chile Chicken.
Number of Servings: 4

Ingredients

    2 servings "Green Chile Chicken" (258.4 calories)
    1/2 cup onion chopped
    1 cup zucchini chopped
    1 cup yellow squash chopped
    1/2 cup pinto beans, drained (Bush's Pintos Frijoles - 80 calories per 1/2 cup)
    1 can 98% fat free cream of Mushroom Soup
    1 cup chicken stock, reduced sodium
    1/2 cup water
    1 tablespoon cilantro chopped

Directions

Sautee Onion until slightly translucent. Add a little salt to sweet the onions. Add squashes and continue to sautee for about five minutes. Again, add a bit of salt to help the squash release its juices. Add remaining ingredients, except cilantro. Let come to a boil then reduce heat to a simmer for 20 minutes or until squash is tender. Remove from heat and stir in chopped cilantro.
