Melissa's World Famous Turkey Enchilada's

Introduction

Make these using leftover shredded turkey or chicken. Make these using leftover shredded turkey or chicken.
Number of Servings: 6

Ingredients

    2 cups shredded turkey or chicken
    6 large size corn tortillas
    1 can Rotel tomatoes and diced green chillies
    1/2 can fat free refried beans
    1/2 cup salsa
    1 large can enchilada sauce
    1 bag kraft 2% shredded mexican cheese - 8oz

Directions

Mix shredded chicken with 1 can drained rotel and salsa.
Heat 6 tortillas covered in wet towels in microwave until soft.
Spread refried beans evenly on each tortilla. Divide chicken mixture and place on each tortilla. Sprinkle on a little bit of the cheese saving most for topping. Roll up tightly and place seam side down in 9x13 baking dish, sprayed with cooking spray. I also put a little bit of the enchilada sauce in the bottom too. Pack in tortillas and cover with enchilada sauce and remaining cheese. Cover and bake 350 degrees for 1 hour. Uncover and bake about 10 min till cheese is brown and bubbly.
I garnish mine with fat free sour cream!
