Pork Roast and Vegetables

Introduction

Serves 3 with plenty of pork leftover for sandwiches. Serves 3 with plenty of pork leftover for sandwiches.

Ingredients

    2 pounds boneless pork sirloin roast
    1/2 cup flour
    1 tbsp butter
    1 tbsp oil
    1 medium onion, chopped
    20 baby carrots
    3 red potatoes, cut in half

Directions

Heat butter & oil in pan. Dredge roast with flour. Sear roast in butter & oil. Remove from pan. Cook onion in drippings. Place cooked onions in bottom of baking dish. Add roast, carrots, and potatoes.

Cover and bake at 350 degrees for about 1 1/2 hours. Place the roast on a serving dish and place the vegetables around it.

Slice and serve.
