Sweet Potato Gnocchi with Chicken Sausage and Kale

Introduction

I used my homemade gnocchi in this...it's rich, satisfying, and 100% whole foods. I used my homemade gnocchi in this...it's rich, satisfying, and 100% whole foods.
Number of Servings: 4

Ingredients

    White Sweet Potato Gnocchi with Parsley and Basil (see my other recipes)
    1 bunch of kale (I use Dino)
    1 packet italian-style chicken sausage
    romano cheese
    olive oil

Directions

Prepare a pot with 4 cups of water. Add a pinch of salt and few drops of olive oil. Set to boil
Tear kale into bite size pieces
Chop sausage into bite-size rounds and brown in large skillet over medium heat.
Once the water boils, add the gnocchi and cook for 2-3 minutes, until it rises to the surface. Cook in batches, scooping out with slotted spoon
Once the sausage is browned, deglaze with a little of the wine and throw the kale in
Add the rest of the wine and garlic powder. Cook until Kale softens, about 5 minutes.
Throw the cooked gnocchi into the skillet once the kale is cooked. Toss with romano cheese and olive oil. Enjoy!
