Protein rich Omelette

Introduction

Number of Servings: 1

Ingredients

    3 Eggs - 1 whole and 2 whites
    50g Turkey Mince
    2 slices Red Onion
    Half cup of Mushrooms
    1 tbsp Extra Virgin Olive Oil

Directions

This is one serving.

Turn on the grill to warm up.

Lightly fry the onions and mushrooms until soft, add the mince and brown off. Lower the heat and pour over the beaten eggs. Allow to gently cook through until the bottom is browning off.

Place under the grill and allow the top to cook and when fluffy and slightly brown transfer onto a plate and consume.

If you would like as a meal then it would go great with a side salad.
