Mince and Cheese Quesadilla

Not quite an authentic recipe but still yummy never the less. Its a small portion, but very tasty - one portion is equal to a quarter of a one Quesadilla but I do make it with pretty large wraps - (they are 25cm across). Ingredients

1 tbs olive oil
500g extra lean beef mince
1tbs dried onion flakes
2tbs chilli powder
1/2 tsp salt
1 tsp garlic powder
3tsp flour
1 tsp ground cumin
1/2 to 1 tsp cayenne or paprika
1 to 2 cups water
90g cheddar cheese, grated
6 large wraps
Directions
1. Heat the oil in a pan and brown the mince.
2. Whilst the mince is browning mix all the spices together, then add to the mince and stir through.
3. Add a cup of water and bring to the boil and then reduce to a simmer. Simmer for approx 20mins, until onions have softened and the water has made a sauce, if it gets dry add more water.
4. Divide mince and cheese into 3. Take three wraps and put 1/3 mince and 1/3 cheese on each, then top with remaining 3 wraps. Put in sandwhich maker until browned and the cheese has melted.
5. Cut each Quesadilla into 8 - one portion equals 2 pieces. Serve with guacemole, salsa and sour cream (not included in nutrional value of recipe).
Note: If you don't have a large enough sandwhich press, you can brown in a large saucepan, flipping over to do both sides, just handle carefully.
