Ingredients

1 package of Trader Joe's Cornbread
1 package of Smart Ground Mexican Style veggie crumbles
1 can of Trader Joe's Fire roasted tomatoes with green chiles
1 can of Black beans (drained and rinsed)
1 can of Corn (drained and rinsed)
Shredded cheddar cheese (optional)
Directions
Combine the tomatoes, beans, corn and smart ground in a large cascerole dish.
Cover with cheese (optional, tastes fine without it and is less calories!)
Cover mixture with already prepared Trader Joes Cornbread mix (prepare following directions on box- calls for egg, oil & milk but I have used an egg replacer mix in stead of the egg and soy milk instead of milk and it was good too).
Bake at 350 degrees for approximately 35 minutes or until the top starts to turn brown and a knife comes out of the cornbread clean.
