Sun-Dried Tomato-Barley Pilaf

Introduction

Nice alternative to rice pilaf, adapted from Diabetic Living Magazine Nice alternative to rice pilaf, adapted from Diabetic Living Magazine
Number of Servings: 6

Ingredients

    2 tsp Olive Oil
    1 shallot, finely chopped
    3 cups Chicken Stock
    1 cup Pearled Barley
    1 tbl sun-dried tomatos (not oil packed), coarsely chopped
    2 tsp dried oregano, crushed
    2 tbl Parmesan cheese, finely shredded

Directions

1. In a medium saucepan, heat oil over medium heat. Add shallot; cook until tender, stirring occasionally. Slowly add broth; bring to boiling. Stir in barley, dried tomatos and oregano. Return to boiling; reduce heat. Simmer, covered, until barley is tender and liquid is absorbed (about 40 minutes).

2. Remove barley from heat and let stand. Sprinkle with cheese.
