Lentil Soup

Introduction

Adapted from the cookbook Fresh from the Vegetarian Slow Cooker Adapted from the cookbook Fresh from the Vegetarian Slow Cooker
Number of Servings: 6

Ingredients

    1 onion
    1 carrot
    1 stalk celery
    2 garlic cloves
    1 tbsp olive oil
    1 1/2 cups brown lentils
    6 cups no-salt added tomato juice
    1 tsp soy sauce
    1 c. kale, cooked in boiling salted water

Directions

Chop the onion, carrot, celery and garlic. Saute in the olive oil for 10 minutes or until soft.
Put the veggies in a 4 quart crockpot. Add the lentils, tomato juice, and soy sauce. Cook on low for 8 hours.
Just before eating, stir in the cooked kale
