Coco Rice & Beans (vegan)

Introduction

Another one from my favorite cookbook "The 30 Minute Vegan." This is incredibly simple. The book says it serves 8-10 people but My hubby and I practically ate the whole thing ourselves. Ingredients

    2 c White Basmati Rice
    1.75 c Water
    1 tsp Fresh Thyme
    14 oz Coconut Milk
    1.5 c Cooked Black-eyed Peas

Directions

1. Place the rice, water, thyme, salt, and coconut milk in a medium-size saucepan over medium-high heat. Bring to a boil. Lower the heat to a simmer, cover and cook until liquid is absorbed, about 15-20 minutes.

2. Remove from heat and transfer to a large bowl with the beans. Gently mix well and enjoy.

Variation: Saute green peppers while rice is cooking. Then mix with the rice and beans.
