Introduction

This "crustless" version of pumpkin pie is served up in individual cupcake liners, with a vanilla wafer in the bottom for "crust". This "crustless" version of pumpkin pie is served up in individual cupcake liners, with a vanilla wafer in the bottom for "crust".
Number of Servings: 18

Ingredients

    3/4 cup sugar
    1 tsp cinnamon
    1/2 tsp ground ginger
    1/2 tsp nutmeg
    1/4 tsp ground cloves
    12 oz fat free evaporated milk
    2 eggs
    15 oz pumpkin
    18 Vanilla Wafers

Directions

combine dry ingredients

beat eggs in large seperate bowl

add pumpkin and dry ingredients into eggs

gradually add milk

place one vanilla wafer in the bottom of each cupcake liner, and pour pumpkin mix into cupcake tins.

bake at 400 degrees for 10 min then 350 for another 30 mins or until knife comes out clean

let sit for two hours, then refrigerate
