Raisin Pumpkin Bread Pudding

Can be assembled before hand as directed, then covered. Refrigerate several hours or overnight. When ready to serve, preheat oven to 350F. Ingredients

    12oz day old bread cut into 1-inch cubes
    3/4c unpacked raisins
    4 eggs
    1c almond milk
    1 can (15 oz.) pumpkin
    3/4c firmly packed dark brown sugar
    1 tsp. vanilla
    1T Pumpkin Pie Spice
    20 Pecan Pieces crushed

Directions

Preheat oven to 350F. Place bread cubes and raisins in greased 13x9-inch baking dish.

Beat eggs, milk, pumpkin, brown sugar, pumpkin pie spice and vanilla with wire whisk until blended. Pour over bread stirring to coat bread evenly and then sprinkle with pecans.

Bake 45 min. or until knife inserted in center comes out clean.

Serve with maple syrup if desired. (Not in NI)
