Introduction

Layers of tasty. Add spices. Layers of tasty. Add spices.
Number of Servings: 6

Ingredients

    From top to bottom:
    Matso (matsa) cracker for the lower layer
    Mashed potatoes (a little soy milk & margarine)
    Refried beans
    Zucchini
    Tomatoes (drain thoroughly)
    Spinach or Okra or other green (fresh would work, too)
    Black beans
    Sprinkle with nutritional yeast
    Intersperse with spices: chili powder, pepper, curry powder, or others

Directions

Layer this in a square baking dish (or other), with your favorite veggies. If you use raw veggies, it will take longer to cook (or, you can cook them somewhat beforehand).

I had okra, but should have used spinach.

Bake at 350 for 30-40 minutes.
