Apple Sausage Cranberry Stuffing (Allrecipes, modified)

Ingredients

    4 Shady Brooks Hot Italian turkey sausage (apx 13 oz), removed from casing
    8 oz cubed bread (sourdough, wheat, etc)
    1/2 c onion, chopped
    1/2 c celery, chopped
    2 tsp ground sage
    1/2 tsp dried thyme
    1-1/4 tsp dried rosemary
    1/4 c fresh parsley, minced
    1/2 c dried cranberries
    1/2 c fat-free, reduced-sodium chicken stock
    3 T Brummel & Brown
    1/2 turkey liver, cooked, chopped finely
    1 Golden Delicious apple, cored and chopped (apx 192 g)

Directions

Preheat oven to 350F.

Spread bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes until evenly toasted. Transfer to a large bowl.

In a large skillet, cook the ground sausage and onions over medium heat until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.

Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, parsley, and liver. Drizzle with chicken stock and melted Brummel & Brown and mix lightly.

Spoon into round casserole dish and bake for 20 to 30 minutes until lightly browned and heated through.

Apx 125 g per serving, precooked.
