1/2 cup red onion, thinly sliced
1/4 cup fresh lime juice
1 TBSP olive oil
3/4 tsp table salt
1/2 tsp ground cumin
1/4 tsp hot pepper sauce
2 1/4 cups jicama, diced
1/2 pound cooked boneless, skinless chicken breast, shredded
1 medium mango, cut into 3/4 inch cubes
1/2 cup cilantro, fresh, chopped
Add diced jicama, shredded chicken, cubed mango, and cilantro; toss to mix and coat. Yields about 1 1/4 cups per serving.
